Spice Inventory: Ginger, Ginger, Ginger and... Ginger

A little reorganizing of my spice cabinet uncovered a treasure trove of ginger. Not one, not two, not three, but four jars of ginger! Holy smokes, how did I end up with so many jars of ginger?! And what on earth did I ever use it for?! I suddenly can't think of any recipe that I make that calls for ginger. And suddenly I realize how badly I need some recipes that call for ginger.

So I told my colleague and friend Martha (no, not Martha Stewart, in case you are wondering) about my ginger dilemma today, and, poof, she just happened to have a recipe for carrot ginger soup saved on her work computer. Even more oddly enough, I just happened to have every ingredient for the soup on hand. As soon as I got home from work, I pulled out one of those ginger jars and whipped up some oh-so-yummy carrot ginger soup. Mmmm.

Other recipes I uncovered online during my office hours include garlic ginger pork roast, Chinese-style barbecued spareribs, amaretto oriental salmon, Chinese asparagus in ginger-scented brown sauce, and big soft ginger cookies. Looks like there are plenty of opportunities to use up at least a bottle or two of the never ending supply of ginger. When I am able to catch my breath from the ginger epidemic, I will let you know what transpires with the three bottles of basil found hiding ever so slyly behind the four bottles of ginger. I can deal with only one territorial spice at a time.

Doesn't it though?! I can only assume that somehow my body needs ginger intake. And what are those benefits of ginger? Looks like another blog entry...

I have a twisted take on orange chicken with cilantro ginger basmati rice. My kids love it, Curtis asks for it, but I usually surprise him with it after he belt tests in karate. Will have to tell you about it some time

fresh ginger is also fantastic in juice! Put a small piece in carrot/ apple/pineapple or other mix (you have a juicer, right?) and it is wonderful! So many good health benefits in ginger too, well I think there are good benefits!

Yes, I have used fresh ginger in juice. I have The Juicing Bible, which has amazing recipes. Thanks for mentioning the juicer; your post made me pull The Juicing Bible out, and I really need to get back on track with juicing. I found a recipe for a beet/carrot/apple concoction that I want to try later today.
